Spring is here, and so are my baking plans! Whether you’re in the mood for something quick and festive or ready to tackle a more complex recipe, I’ve got a mix of both. Here’s a roundup of some of my favorite spring bakes, along with a few I’m looking forward to trying. This post may contain affiliate links.
Tried & Loved: Spring Treats
Strawberry Shortcake Cupcakes
Difficulty: Medium (3/5)
Time: 3 hours (includes cupcake cool time)
These cupcakes are a springtime dream! A vanilla bean cupcake base, paired with a strawberry lemon filling and topped with strawberry whipped cream—what’s not to love? If you adore angel food cake or strawberry shortcake, this treat is perfect for you. The recipe is from Sally’s Baking Addiction and is one of my all-time favorites.
Lavender Shortbread Cookies with Lemon Glaze
Difficulty: Easy (2/5)
Time: 1 hour 35 minutes
I discovered these lavender shortbread cookies last spring and fell in love. They have a subtle lavender and vanilla flavor that’s so delicious on its own, but the addition of a lemon glaze takes them to the next level. I sometimes decorate them with edible flowers for a springtime touch. The recipe is from Fifteen Spatulas, and I highly recommend it for a simple yet elegant treat.
My Favorite Tools:
Edible Flowers (Optional)
Flower Cupcakes
Difficulty: Hard (5/5)
Spring is the perfect time to get creative with floral cupcake decorations. I love making cupcakes decorated as flowers, and while the flavor choices are endless, the decorating is the real fun part! Roses or any flower made with a Russian piping tip are gorgeous and the most simple to make if you’re a beginner. If you're looking to start, Kerry from Kerry’s Bouqcakes has fantastic tutorials.
Blueberry Scones
Difficulty: Easy (2/5)
Time: 60 minutes
These blueberry scones from Sally’s Baking Addiction are a go-to for me, especially since they can be made ahead of time and stored in the freezer for later. The cinnamon in the dough adds a deliciously cozy twist, and using frozen blueberries yields the best results. This is a simple yet impressive treat for any spring gathering.
My Favorite Tools:
Quick & Easy Easter Treats
If you’re looking for fun and fast treats for Easter, these options will be a hit with minimal effort!
Carrot Patch Easter Brownies
Difficulty: Easy (2/5)
Time: 30 minutes
A super quick and adorable Easter treat! Using your favorite boxed brownie mix, top the brownies with Oreo crumbs (for dirt), mini chocolate eggs, and chocolate-covered strawberries (the carrots). This simple recipe from Delish is easy to follow but there are a ton of variations.
Puppy Chow with Easter Eggs
Difficulty: Easy (1/5)
Time: 15 minutes
Puppy chow is a go-to in my kitchen when I need a quick, crowd-pleasing treat to bring to a gathering. For Easter, I love adding pastel-colored chocolate eggs and M&Ms to give it a festive touch. It’s always a hit and vanishes before you know it!
Oreo “Dirt” Pudding Cups with Chocolate-Covered Carrot Strawberries
Difficulty: Easy (1/5)
Time: 20 minutes
For a no-bake Easter dessert, these pudding cups are perfect! Use instant chocolate pudding cups or make your own, and top them with crushed Oreos (for dirt) and chocolate-covered strawberries shaped like carrots. It’s an easy but fun treat for the holiday.
White Chocolate Easter Bark
Difficulty: Easy (1/5)
Time: 20 minutes
Chocolate bark is one of the easiest and most customizable treats. For Easter, I melted white chocolate chips and added festive sprinkles, mini chocolate eggs, and edible sugar flowers. You can add any mix-ins you love—colored M&Ms, sprinkles, or even marshmallow peeps.
Cinnamon Roll Easter Bunnies
Difficulty: Easy (1/5)
Time: 20 minutes
A fun Easter twist on breakfast! Using a can of cinnamon rolls (I used Annie’s), shape them into bunnies and bake. Once they're done, top with the included cream cheese frosting and sprinkle with festive sprinkles (flower sprinkles work great!). This was a big hit last spring, and I’m excited to make it again this year.
New Recipes on My TBB (To Be Baked) List
Here are a few spring recipes I can’t wait to try:
Raspberry Lemon Rolls
I’ve been eyeing these rolls for a while. They require homemade dough and proofing, which has kept me from committing (primarily due to the time involved), but I’m determined to give them a try this spring. The combination of raspberry and lemon sounds heavenly, and I can’t wait to tackle this recipe!
Coconut Cake
This coconut cake from Sally’s Baking Addiction has been on my radar for a while, but my family isn’t as obsessed with coconut as I am. I’m hoping to find the perfect occasion to bake it, as I need that coconut cream cheese frosting in my life!
Lemon Bars
A classic spring treat! I’ve tried different versions, but the Broma Bakery recipe is next on my list. I’ve loved every recipe I’ve tried from her, so I’m excited to see how this one compares.
Pistachio Cake
I’m not super experienced with pistachio desserts, but I’m making it a goal to change that! I think this pistachio cake will be a great starting point. It looks beautiful and relatively simple for my first foray into pistachio baking.
I hope you enjoy these spring-inspired bakes and treats. What are your favorite spring desserts? Let me know—I’m always looking for new recipes to add to my collection!
Stay Cozy,
